Foodborne illness from Salmonella contamination of chicken is a rare, random, variable, and uncertain event. It occurs when by random chance multiple risk factors occur at the same time. Occurrence of this “perfect storm” can be predicted using @RISK. In this seminar, use of @RISK to simulate risk of salmonellosis from chicken produced by different farm-to-table scenarios will be demonstrated using the USDA, ARS, Poultry Food Assess Risk Model (FARM) for Salmonella and chicken gizzards. Poultry FARM is designed to identify unsafe chicken before it is consumed.
